This super simple recipe has all the homemade flavor, but it only needs 6 ingredients. You’ll need Jiffy Corn Muffin Mix, an egg, canned cream style corn, canned whole kernel corn, melted butter, and sour cream.

How To Make Corn Casserole With Jiffy Corn Muffin Mix

Honestly, this is probably one of the easiest recipes you’ll ever make. It’s basically a dump, stir, and bake recipe.

Start by whisking the egg in a large mixing bowl, then add in the cream style corn, whole kernel corn, sour cream, and melted butter. (See the recipe card below for the full printable instructions.)

Gently mix in the Jiffy Corn Muffin Mix (you don’t want to overmix it), then pour the batter into a greased baking dish.

Make Ahead Instructions

This is a wonderful make ahead recipe for the holidays!

All you have to do is prepare the casserole as instructed and pour it into the greased casserole dish. Tightly cover the baking dish with plastic wrap and store it in the refrigerator for up to 24 hours.

  • 1 (14.75 ounce) can cream style corn
  • 1 (15.25 ounce) can whole kernel corn
  • 1/2 cup sour cream
  • 1/4 cup butter (melted)
  • 1 (8.5 ounce) box Jiffy Corn Muffin Mix

Instructions

  1. Preheat the oven to 350 F (176 C). Lightly grease an 8 x 8 baking dish.
  2. In a large mixing bowl, whisk the egg. Add in the cream style corn, whole kernel corn, sour cream, and melted butter. Mix to combine. Stir in the Jiffy Corn Muffin Mix, but don’t overmix it. Pour the batter into the greased baking dish.
